Refile of a report first transmitted on December 3, 2012. SCRIPT: They say necessity is the mother of invention- And that's exactly what played out here, in the Swiss Alps. While digging a railway tunnel, engineers hit on hot water flowing from the mountain. So the head engineer designed an alternative plan of action... SOUNDBITE 1 - Andreas Schmid, Head of Marketing and Sales for Trophenhaus Frutigen (English, 15 secs): "He came out with the idea of starting a sturgeon farm here in Frutigen as the Siberian sturgeon very easily adapts to the water temperatures and they also like warm water as in summer in Siberia" And so, Swiss caviar was born: Made from all natural ingredients, a pinch of salt and precise conditions. SOUNDBITE 2 - Tobias Felix, Head of production for Trophenhaus Frutigen (Swiss German, 12 secs): "The temperature of working rooms are kept at four degrees Celsius while storage areas vary between minus two and two degrees. With that our caviar can last 6 months." "Die Arbeitstemperatur der Räume ist 4 Grad Celsius, die Lagertemperatur ist -2 bis +2 Grad und damit erreichen wir eine Haltbarkeit von 6 Monaten des Kaviars" Six years after the first fish were dropped into the breeding tanks, they're now 35,000 Siberian sturgeon. Caviar sells for 2,500 euros per kilogram, still cheaper than caviar from wild fish. SOUNDBITE 3 - Andreas Schmid, Head of Marketing and Sales for Trophenhaus Frutigen (English, 18 secs): "We will be producing this year around 500 to 800 kilograms and in the final stage we will be producing around 3 tonnes of caviar, of which 2 tonnes will be for the export." The caviar will be sold in the US, Asia and Germany- And with the holiday season fast approaching, Swiss chocolate may be upstaged by this healthier, fishier alternative.
