        You start to learn that top chefs and fine dining chefs, most of their food is loaded with cream, butter, salt, etc. It tastes good for a reason :D

      It's loaded mashed potato. I'm swapping out the mascarpone cheese, and using a creme cheese instead. Why? I don't have time to go to the store. When I'm feeling down I eat this dish!       Chef Fabio is awesome, I would give anything to meet the guy and thank him for all the great recipes I have tried. I loved the Roasted Chicken 2 weeks ago and used the same recipe with a few additional ingredients for Thanksgiving Turkey dinner. Thanks Fabio!!
