      Ok I made this a couple times, and it's not coming out right, even using leaner cut's of meat. The sauce ends up tasting "fatty" from the meat even after skimming it. And what tomatoes to use? The only thing I can find in South FL in Publix is Tuttorosso Plum tomatoes in sauce which is apparently recommended in a lot of sauce recipes however it looks nothing like the canned ones he had in the bowl (his looked thicker and way more red/richer).

        I had the same problem with the fattiness. I grew up on Long Island with plenty of Italians and i payed attention to how it was done. Make plenty sauce. Some to cook the meatballs with and some for after they are done. Disregard the fatty sauce leftover from the meatballs... i also baked them a little while in the fatty sauce after they were seared to ensure they were cooked thoroughly. i think because my meatballs were bigger they cooked too fast on the outside. Then I garnished my meatballs with the non-fatty sauce.

        Thanks. I've actually changed it up, been using ground turkey that I season and mix with panko/milk mixture (this is what keeps meatballs super moist and flavorful), comes out incredible. But the ground turkey makes a huge difference, no fatty meat taste to the sauce. Though still having a hard time with the sauce, it's fine to me now, but I can't find anything that even closely resembles whatever it was that he used. His canned tomatoes seem soft and plump with a real thick red juice, it just look so much richer overall.... I've tried various ones and nothing like that. Even real certified San Marzano tomatoes. Wish we knew what the heck he used lol

        You need more water in your cooking to get the fat out. The meat next to the bone is lean not fatty, need better selection of meat to reduce the fat as well.
