      I made the meatballs for a friendly gathering last Sunday and they were a hit!!! My first time making meatballs from scratch and I aced it!!!

      I made these twice in on week! The first time, I followed Fabio's recipe (1 beaten egg added), but noticed the ricotta cheese I purchased was not as thick and crumbly as what Fabio used. I solved that problem by draining it for three days, refrigerated in a colander after wrapping it in a single layer of paper towel. They were so yummy that I wanted them again, but couldn't justify such a decadent treat twice in one week, so I set out to make them lower in carbs and calories. The second time, I substituted a low carb blend of coconut flour/almond flour/vital wheat gluten for the flour, mixed in 2 tsp of Splenda and instead of the chocolate chips, and, in lieu of rolling them in granulated sugar, I lightly sprinkled them with Splenda. They had a slight hint of coconut from the flour substitute. Not as delicious as Fabio's, but were still good. Both times, I used canola oil for frying.

        If you pay attention to the end of the video is says (and even shows) that if you look to the bottom right of the video...the recipes are right there.

      Those of you who that can't find the typed up recipes, they are located to the right of the video description and comments right under recipes from the show. You have to click on the one you want and then you will find your written recipe. A little effort in searching goes a long way.
