      One of the best thing you can do is add peas on it just to take the saltiness out, and instead of putting parmeggiano regiano I add Camembert or Brie to make it more creamy . enjoy!

        Spongebob, It does look like good stock huh? I make one that looks very similar not sure if it tastes as good as a professional chef's stock though. I put a whole chicken in the crock pot adding a little salt, pepper and garlic powder then let it cook all day. I then take the bird out, let it cool, debone; putting all bones and scraps back into the crock pot. Then fill the crock pot with water and let it cook over night. You could add bay leaves, celery stalks etc if you want. When I wake up, I turn the crock pot off, let it cool then pour all the stock through a strainer a few times. Pour into different containers because this method makes a lot of stock. I chill in the fridge long enough for the fat to solidify then scrap all the fat off. You could keep the fat in for more flavor or use it for something else. I usually freeze half of the stock and use the rest or give to neighbors. Mangia!

        Caddie is spot on! great post. If you don't have a whole chicken (preferred) you can just as easily use a package of thighs or backs from the supermarket. Cook it the same way and voila easy as 1-2-3 stock

      i do like fabbio, but he i think he didn't execute the risoto perfectly. I was told risoto should be loose and be creamy like oatmeal and just smear once its dropped onto the plate. Fabbios looks too stiff

        He was cooking to his preference (the whole to the tooth part). If he would've let the rice and panceta go a few minutes longer before adding the cream and cheese it would've been a lot creamier.

        yes. I did and it turned out very good. Not as good as the recipe calls for though I'm sure.

        yes you can and it is quite tasty, but it has that smokey flavor to it.
        risotto is much much better if you can use pancetta
