        Yes, you can substitute. I use a sweet concorde grape wine, Manischevitz; but when I'm cooking something specific like Chicken Marsala, I use the Marsala. But you can use the concord grape wine, it's not as expensive. Marsala & Manischevitz should be in the wine isle of any major grocery chain. Hoped this answered your question.

      Gee, I wonder if all those comments from a previous cooking "class" has now made him yack about washing his hands!!! Many comments on that previous one (or more that I missed) kept crying about how he had different things (chicken was the meat) on one surface, didn't wash the surface, didn't run to wash his habds all the time....Geez Louise...I am 63, only washed my hands if I touched anything other than the food I was preparing, used the same surface for all the ingredients AND used to eat raw chopped meat with a little salt and pepper once in awhile! I AM STILL ALIVE AND HEALTHY; NO PARASITES IN ME! CONTRACTED NO BACTERIA! BUT I wouldn't think of eating the raw meat now considering the many cases in which dirty folks and dirty processing plants handle our foods.

      Love this man and his recipes. I see he was more careful with his raw meat on he cutting board today,, but not enough. Raw chicken needs it's own cutting board, and not wood. The little bit of Saran wrap he had under it was not by any means enough. The raw chicken extended beyond the plastic. Please Fabio, be more careful.

        Yes, I made the short ribs too and they turned out great - 3 times! I added one little tweak to his recipe: a few chopped up porcinis. Yummm. :^)
